Handmade Sausages

All sausages are made from lean pork, with no added fat, unless otherwise noted. Smoked varieties are cooked in our own smokehouse.

ANDOUILLE: Relatively mild in heat, but highly seasoned Cajun sausage, perfect for adding to red beans & rice, jambalaya, or gumbo, or simply grilled and served on a bun; fully cooked.

BAVARIAN BRATWURST: A traditional-style bratwurst, seasoned with garlic and onion; fully cooked. Also available smoked.

BREAKFAST SAUSAGE: The perfect sausage for making sausage gravy, casseroles, dressing or anything else you can dream up. Seasoned with sage, pepper, coriander and other spices, in mild or hot varieties. Available sliced or in bulk.

CAJUN BOUDIN: A spicy Cajun sausage, made with pork, chicken livers, rice, green peppers, onions and Cajun spices.

CHEDDAR BRATS: Our Bavarian Bratwurst with the addition of Cheddar cheese; fully cooked.

Meat Market Handmade Sausages

CHORIZO: We make this Mexican sausage with three different levels of heat: 2½ - Alarm, the mildest of the three, but still quite warm; 5½ - Alarm, definitely hot; and Fresh, which is not for the faint of heart! The 2½ - and 5½ - Alarm varieties are smoked, and therefore fully cooked; the Fresh Chorizo is not.

COUNTRY SAUSAGE: This smoked sausage is seasoned with a variety of different herbs and spices, including sage, coriander, cumin and ginger; fully cooked.

ENGLISH BANGERS: A fattier sausage than most, this favorite of the English is made from beef and pork, and is seasoned with sage, marjoram, nutmeg and lemon.

GERMAN BRATS: This particular bratwurst is seasoned with nutmeg and cloves, and is traditionally soaked in beer before grilling (we'll leave that part up to you!).

HUNGARIAN SAUSAGE: A smoked sausage containing oregano, marjoram, coriander and garlic; fully cooked.

ITALIAN SAUSAGE: Made with fennel, black pepper, and other spices, we package this traditional Italian-style sausage in bulk for making lasagna and spaghetti, as well as in links to grill; available in mild (sweet) and hot varieties.

"HOT" ITALIAN PLUS SAUSAGE: Our hot Italian sausage, plus we add chopped green bell peppers and provolone cheese; available in links only.

LINGUISA: A Portuguese sausage seasoned with paprika, oregano, garlic, coriander and other spices, and smoked in our smokehouse; fully cooked.

LOUKANIKA: A Greek sausage containing leeks, this sausage is moderately spicy. Delicious grilled and served on a bun.

PIGGIE LINKS: The same as our Breakfast Sausage, but in small links; available in mild and hot varieties.

POLISH SAUSAGE: Garlic is the predominant flavor in this sausage, with hints of rosemary and marjoram; available in fresh and smoked varieties.

SUMMER SAUSAGE: Made from beef and pork, and seasoned with whole mustard seed and just the slightest hint of garlic, this sausage is perfect for serving on crackers, on a sandwich, with cheese, or for just eating out of hand; fully cooked.

SWEDISH POTATO SAUSAGE: A very unusual sausage made from pork, beef, potatoes, onions, and allspice.

TASSO: Not really a sausage, tasso is a very spicy and highly seasoned piece of smoked pork that is used primarily in various Cajun dishes, including jambalaya and gumbo.
